    Water quality is important for a great-tasting cup of coffee. If you don’t have great water we suggest using a inexpensive water filter pitcher like a Brita. Bottled spring water is also okay but don’t use distilled water--you need some mineral content to properly extract the flavor from your ground coffee.

       For manual brewing, the optimal water temperature is 195 to 205 Degrees Fahrenheit.  If the water isn’t hot enough, the coffee will be under-extracted and have a flat taste. If the water is too hot, the taste will also suffer. It’s easy to make sure the water is the right temperature. Just bring it to a full boil and then let it sit for about a minute or two.

    Brewing time is also very important. For a drip system, the ground coffee should be in contact with the water for about 5 minutes. In a plunger pot, the contact time should be from 2 to 4 minutes. Experiment with different times until the taste is to your liking.

       If you use an automatic coffee machine don’t let the coffee remain on the warming plate. Transfer the coffee into an insulated carafe immediately after brewing and you’ll be rewarded with fresher-tasting coffee cup after cup.

    For the freshest-tasting cup, coffee beans should be ground immediately prior to brewing.  An inexpensive whirling blade grinder is okay but we strongly recommend investing in a burr grinder. You can get a really nice burr grinder for under a hundred dollars. Not so bad when you consider it will probably last you for many years.

       Different brewing methods call for varying fineness of  grind. Too coarse, and the coffee will have a lackluster flavor. Too fine, and the coffee will have a bitter taste. Experiment with a variety of grinds until you find the one that suits you best. This is where the multiple settings of a good burr grinder really come in handy. You should use 1 to 2 tablespoons of ground coffee for every 6 ounces of water.
