HERITAGE

In 1996 a group of small indigenous coffee cooperatives in the Mayan Highlands of the Mexican state of Chiapas banded together to produce environmentally responsible organically grown coffee. They have since used their resources to improve their homes, further their children’s education, and provide food and medical care for their families. Shade-grown at altitudes of up to 4,500 feet in the Sierra Madre Mountains, the coffee of Chiapas is among the fullest-flavored, smoothest coffees in the world. It is famous for its crisp acidity and nutty, syrupy body.
